

Hey y’all, I’m Charlie — and let me tell you, this has been one heck of a journey. I started my BBQ journey in Texas, where BBQ is more than food — it’s a way of life. I spent years by the pit, learning how a little wood, a lot of patience, and good company can turn simple ingredients into something magical.
When I moved up to Wisconsin, I missed that smoky flavor that reminded me of home. So I figured, why not bring it here? I rolled up my sleeves, fired up the pits, and set out to share real-deal Texas BBQ with my new neighbors. Around here, we smoke our brisket low and slow, ribs that fall right off the bone, and sausage that snaps just right — every bite made with love and a little Texas stubbornness.
But the best part? Seeing folks gather around a table, laughing, sharing stories, and taking that first bite. That’s what BBQ’s all about. So come on in, grab a plate, and stay awhile.
